It is not 600 pounds of packaged meat from a 1,200-pound animal. That particular confusion is expensive.

The last range changes with the cutting instructions. Those figures describe different fabrication choices, so avoid stacking every low-end percentage into one gloomy calculation. The processor’s recorded hot weight, aging period, trim standard, bone-in choices, and final package tally belong on the same receipt.

How does a cut sheet turn subprimals into steaks?

A cut sheet divides finite sections. Every roast requested from a section consumes length that could have become steaks, and every steak consumes thickness plus a narrow saw or knife cut. The processor cannot produce a full rib roast and a full run of ribeyes from the same rib section.

The USDA Agricultural Marketing Service’s IMPS 100 specification defines the beef rib primal as seven ribs, the 6th through the 12th. What should you change when the quoted steak count looks low?

Ask for the allocation behind the count before asking the processor to “make more steaks.” A low number may mean that valuable sections have been reserved for prime rib, strip loin, tenderloin roast, chuck roast, or sirloin-tip roast. It may also mean the quote covers premium grilling steaks and excludes round or chuck.

Work through the sheet in this order:

  1. Circle the steak families your household actually cooks, then write the desired thickness beside each one.
  2. Choose between rib roast and ribeye steaks. A split allocation is possible when the processor offers it.
  3. Choose T-bone and porterhouse, or separate New York strip and tenderloin. Requesting the full quantity of all four double-counts the short loin.
  4. Mark chuck, round, arm, and sirloin tip as steak, roast, stew, cube steak, or grind according to your cooking habits.
  5. Set package size separately from steak count. Two steaks per package changes thawing convenience, while leaving the number of steaks unchanged.
  6. Confirm which requests the processor can perform, the aging period, trim level, ground-beef lean ratio, and whether the quoted count is for a half or whole beef.

If the order has already reached the cutting room, options narrow quickly. Thickness can change only before slicing. A whole subprimal may still become steaks or a roast; finished steaks cannot be reassembled. Trim and less-tender cuts can usually move toward ground beef, stew meat, or cube steak while fabrication is underway, subject to the processor’s workflow.

When should potential steaks become roasts or ground beef?
